almond butter

Do you love almond butter but like me, internally wince at paying the high price in health food shops (especially compared to peanut butter)? Luckily it is super simple to make your own.

Ingredients to fill a 400g jar:
Whole raw almonds
A few teaspoons of rapeseed or grapeseed oil. Don’t use olive oil – it’s too strongly flavoured.
Sea salt to taste (optional)

Roast almonds in a single layer on a baking tray for 12-14 minutes at 180 degrees celsius.
When cool, pulse in a food processor, scraping down the sides.
Add a few teaspoons of rapeseed or grapeseed oil and continue to process until a paste forms, adding more oil a teaspoon at a time to get the desired consistency.
Add sea salt to taste. I prefer the naturally slightly sweeter taste of almond butter so don’t add salt, but this is personal preference.
